    A flavour often used to describe a Madeira wine is sugar cane (mel de cana). I often wondered about this particular scent when I started tasting Madeira and reading others tasting notes and descriptions. Since sugar cane wasn’t a reference for me I simply couldn’t relate to it – but still found myself writing it down when tasting, thinking I knew. Then, a couple of years ago, when finding out how sugar cane smells and tastes like, it was almost a revelation for a Madeira fanatic – to understand the comparison.
